Summer is the Time to Eat a Summer Rainbow
My family is blessed to live where sunshine is plentiful. Fresh and healthy produce is in abundant supply. We are also blessed to have family members with strong beliefs and knowledge about good nutrition My niece, who was born in China, shared with us about having a rainbow of colors on your plate. She said the China way is to have many colors on our plate and to avoid a plate of only one or two colors. So, now we look at our dinner plate in a whole new way. And what better time to do that when you can eat a summer rainbow?
For years, we were blessed with colorful produce from the Fulford home garden. Sadly, due to the passing of our master gardener, now we rely on farmers’ markets and the grocery store. And summer is the absolute best time to find foods that help us stay healthy.
Colorful fruits and vegetables are as beautiful as they are delicious, but did you know they also have different health benefits depending on what color they are? This is why, according to the International Food Information Council Foundation, “eating a rainbow” of produce is always a good plan. Each time you shop for produce, see if you can get at least five colors - make it a game!
How to Get a Summer Rainbow on your Plate
Here are a few benefits of foods based on their color.
Red: Tomatoes, cherries, red peppers and beets support prostate health.
Orange or Yellow: Carrots, grapefruit, sweet potatoes and cantaloupe promote healthy eyesight.
Blue and Purple: Berries, grapes, plums and eggplant support the brain and blood flow.
White: Cauliflower, onions, mushrooms and garlic help maintain healthy cholesterol levels.
Green: Spinach, avocado, asparagus and kiwi support the immune system.
